That day I didn't have any idea what I would be doing for my challenge. I didn't feel like doing anything at all. I was tired and exhausted, slept less than four hours after dancing all Halloween night and early morning I had a driving lesson. It was horrible! Driving is still pretty stressful and exhausting thing to do for me, and doing it for three consecutive hours after partying all night was ten times harder on me. Came back after the lesson felling like a zombie...

And that was a huge excuse to bake apples that day ;).

Any commitment is a hard work and I didn't have plans to give up even I felt really tired. We had a long discussion about a challenge for the day with a friend of mine while drinking tea. We had a plate of apples on the table. That's where the idea of baking apples came from.

So, I baked apples on the day eighteenth of my four weeks challenge before turning thirty.

Here is how I baked apples

I washed apples. Scooped out the core from top of each apple. Mixed cottage cheese with dried prunes and one egg. Stuffed each apple with the cottage cheese feeling and baked in preheated oven for 30 minutes. Sprinkled with cinnamon and confectioners sugar.

Easy to do, healthy and so delicious! Great option for a breakfast.
